Good morning everyone!! Well what a weekend.
Friday night we were in Stratford (Ontario) having dinner with friends.. We went to Pazzo's and had wonderful food. I wish I had brought my camera to take pictures... Great Italian fare...Pizza, spaghetti and meatballs, ceasar salad, squash soup.. It was all yummy!
Saturday night we went to other friends for dinner so needless to say we were spoiled...
Since it was so sunny here all weekend I got the itch to start spring cleaning. Long story short I didn't feel like cooking a huge meal Sunday night so took LOTS of short cuts.
I had stuffed agnolotti in the fridge, mozzarella cheese and a jar of vodka sauce.. I boiled up the pasta, drained it and layered it with sauce and cheese in a 9 x 13 " pan. Threw it in the oven and presto - dinner*** I added some cheese to some molisana bread and put it under the broiler. A light salad topped it all off...
Still a lovely dinner but QUICK*** and makes use of what you have in your fridge...
