I just love this recipe for Shrimp with Lemon and Pasta... I may have posted this a while back but its what I had so I did it again.

This is the easy home made foccacia off of the NOBLE PIG'S site. SO easy to put together and SO delicious***Check out the recipe HERE***

SHRIMP WITH LEMON AND PASTA***
I used two packages of 16-20 shrimp, thawed and tails left on
1 large package of spaghetti, cooked
3-4 T. good olive oil
3 cloves of garlic - finely chopped
zest of two lemons
juice of said lemons and extra pasta water if needed
a generous pinch of red pepper flakes ( I like it spicy)
Italian parsley - chopped
salt and pepper
Cook the pasta while you make the shrimp...
Pour the olive oil in a saute pan and heat... Cook shrimp until slightly pink... Add garlic and cook for another 1-2 minutes. Add the zest and juice, pepper flakes, salt and pepper and cook until the shrimp are pink.
Add the Italian parsely. Drain the pasta and pour into a nice bowl, add the shrimp and serve hot with the home made foccaccia... YUM!!!

Both of us are thinking shrimp this week, Janine. I love it with a splash of citrus and some pasta. I saw the foccacia recipe but haven't tried it yet. It looks delish.
That pasta looks delish!! Since I have a freezer full of shrimp, it's definitly going into my must try list!

Yum! And with homemade focaccia to boot! I occasionally make what I like to call faux-caccia, with pizza dough! I'm betting yours is better!
