OH MY GOSH***

THIS WAS SOOOOOOOOOO YUM***

TEX-MEX CHICKEN WITH CHILES AND CHEESE

adapted from Fine Cooking 2010

1 1/4 lb. boneless,skinless chicken breasts cut into 1" cubes

1 1/2 tsp. chili powder

1/2 tsp. cumin

kosher salt and fresh cracked pepper

1/2 cup flour

3 1/2 T/ unsalted butter

canned corn kernels or fresh off the cob

1 whole jalapeno, seeded and sliced thin

1 large garlic clove, minced

limes about 4 juiced

fresh oregano or dried

1 cup sharp cheddar

Toss chicken with chili powder, cumin and salt and pepper. Lightly dredge in flour and shake off excess. In cast iron skillet (gotta use one of these), melt 2 T. butter, adding the chicken and cooking until brown. Transfer to a plate.

Add remaining butter, corn, jalapeno, garlic, oregan and lime juice. Return chicken to pan and stir until cooked through.

Sprinkle with cheese and put under the broiler until cheese has melted and begins to brown.

Serve alone, with rice or in tortillas.

Our lovely Miss Sharon has given us a sketch to work with this week! I am so glad that she does this every so often because I don't use them as a guide as often as I should. I made this tote bag for a friend's daughter and I needed a card to go with it. SO scroll down to see my contribution to this week's challenge.

My card has yellow card base and some fabulous paper that I found in my bit bin.. I ALWAYS try to use papers from my bit bin. The image is from Whipper Snapper Designs, colored with Copics and the sentiment is from PTI!! Super simple..!!

Well I tell ya! I could use a few flakes right about now... The heat and humidity have been NUTS up here !!





So this week's challenge is courtesy of Deb Neerman and you guessed it!! Christmas!!


Get out the songs, your very best Christmas stamps and get started on your Christmas card collection!



Mine is staying true to our STAMP SIMPLY CHALLENGE. It literally took me less than 10 minutes to make. Dark blue cardstock, white cardstock, snowflake stamp and sentiment from Stampendous, dark blue ink. Stamp the snowflake on the large piece of white randomly and then add one snowflake to a smaller piece with the sentiment. I added some clear gemstones for a little bling!!

Hi everyone! We are playing with stars for today's STAMP SIMPLY CHALLENGE!! Any kind of stars you want*** Stamped stars, punched stars, painted stars***

I used cream and Hawaiian Shores cardstock from PTI and a star stamp from Verve..

I used Hawaiian Shores ink and stamped the star, popping one up with dimensionals and adding a few gemstones for interest!! I also added a tie-on of satin ribbon and a little tag*** I just printed "happy birthday" on the tag with my own little hand!!!
