My husband has been away all week at a trade show so tonight I thought I would treat myself to a lovely dinner... Dinner for me*** I scour food blogs, watch the Food Channel ALL the time and read cookbooks*** It all started with this recipe for Ceasar Salad Dressing from Stone Gable.
I set a lovely table. Nothing fancy. A candle and a lovely plate from a friend.

This is the fish I made. Check out Giada de Laurentis' recipe HERE. I didn't have branzino so I used cod fillets which can withstand high heat cooking.

My lovely salad...
Potatoes... very simple... Boil some small red potatoes until fork tender, cool slightly, smash with the palm of your hand and fry in some olive oil, salt and pepper.
Yummy meal***

That looks deelish!! You know how to do it for one--I need to take a page out of your book and treat myself when I'm on my own instead of eating the chicken nuggets the kids left on their plates and a handful of raisins!
Oh, and I'd send you a jar (or 10) of my huckleberry jam, but I promise you, you wouldn't like this stuff. I did something wrong--it tastes like dirt!!

Your quiet dinner looked very tasty. I'm betting your hubby wished he were with you too. The blog for the Caeser dressing was stunning. I became a follower right away. I got a Barefoot Contessa cookbook for Christmas. I'm making one of the recipes for some stamping pals tomorrow. Stamping and cooking go together well, do you think.

Well your dinner looked just fab! I am watching the food network right now! I am such a foodie! Love Giada and Ina I've made many of their dishes. Ina's lobster mac & cheese to die for! But a quiet dinner alone is sometimes just a wonderful and peaceful time. Great meal, glass of wine and a good magazine to read while you just relax and enjoy your meal! When my husband is away I've been know to tray it up and just lay in my bed!

Oh, this looks delicious, Janine! I'm going to try the potato idea. It won't be the first time I've tried a recipe or cooking idea I found on a stamping blog. When my husband is out of town I love to cook the things he doesn't like -- salmon quiche, for instance, or chicken livers. It makes me nearly giddy to sit down to those meals!
I think it is a great idea to pamper one's self like this. We do and do for everyone else in our lives and tend to short change ourselves. Your dinner for one looked fabulous. Best, Curt
