On the Menu Monday***



Chicken breasts, boneless, skin on... stuffed with a mixture of goat cheese, parsley, green onion, salt and pepper...

Salt and pepper on the outside and a little good olive oil.


Place in hot pan that can go into the oven and bake at 350 degrees until done.. I put the broiler on for a few minutes to crisp up the skin....





Fresh green and yellow beans from the market, simply steamed... They were SO good!!











Couscous and dried fruit... Two cups of hot chicken broth poured over, wait 5 minutes and you have a fabulous side dish... I added some toasted almonds as well at the end.











Dinner is served along with my home made zucchini relish which was good!!
