Butternut squash soup***
Asian tuna salad panini ***
on a bed of arugula ***
It was delicious!!!
Dinner was served up in about 45 minutes!!
Asian Tuna Salad
adapted from Fine Cooking Magazine
2 cans chunk white tuna in water, drained
2-3 Tablespoons mayonnaise
2 teaspoons soya sauce
zest from 1/2 lemon
juice from 1/2 lemon
2 teaspoons sesame seeds toasted
1 Tablespoon chopped fresh mint
Mix all together. Split a roll of your choice... I used an Ace baguette, lay down a bed of arugula, top with tuna salad and heat in your panini press or in a pan until warmed through.

I love squash soup and don't know where I got my original recipe but I think I'll check out the Gormet magazine and see if I can once again find it. What a wonderful looking meal. Pat

Thanks for commenting on my LIM card of last week. I visited you just yesterday...in a rush. I gotta tell you I was disappointed not to see your butternut squash soup recipe, as I have two languishing in my frig. Did you develope your own recipe or can you share a link? You do know I enjoy your kitchen craftiness too.

JANINE...oops misspelled your name...have I ever mentioned that I named one of my dds this name. Only it was the 70s and I went a little weired with the spelling...Janeen. Poor dear. She loves her name, but has to spell it every time.
